Green Tea

Green teas undergo two treatments (roasting and rolling) - they are not fermented.   Roasting (heating) the leaves to 100C kills of enzymes responsible for oxidation leaving the leaves soft.  Rolling can be done to either warm or cold leaves after which the leaves will shaped.   

Green tea is typically prepared using non-boiling water (190F), 1 teaspoon per 8oz cup, and 2-3 minutes to steep.
