White tea is plucked off the Camelia Sinesis bush and air dried (withering of the leaves). Once that is done, it usually gets packaged for selling. White tea is one of the healthier types of tea to drink. Since it doesn't go through any further processes, like other types of tea, it has the most antioxidants.
Its flavor is more subtle and lighter then other types of teas. The caffeine level in a cup of white tea is also very little, only 15 mg per 8 oz. cup of tea (compared to green tea with 20 mg, black tea with 40 mg or coffee with 80 mg).
