White Tea is harvested from the Camellia Sinesis plant but can be made from either the bud or leaf of the plant. Teas made from the bud are called needles and generally call for a higher price. To make white tea, the buds or leaves are not processed after being harvested. The leaves are simply dried and packaged for consumption. White Tea leaves have the highest levels of antioxidants of any Tea variety since the "pure" plant is being enjoyed without any processing that may reduce the antioxidant level. The Camellia Sinesis plant naturally contains caffeine. The amount of caffeine in white tea is generally between 15mg per 8oz cup. White Tea should be prepared using non-boiling water (around 190 degrees Fahrenheit/ 87 Celcius) and 1.5 teaspoons per 8oz cup.
