White Tea

White Tea is harvested from the Camellia Sinesis plant. White Tea is make from either the Bud (??) or Leaf (??) of the plant. Teas made from the bud are called needles and generally call for a higher price. Teas made from leaves are called

Processing

The leaves are not processed after being harvested. The leaves are simply dried and packaged for consumption. White Tea leaves have the highest levels of antioxidants of any Tea variety since the "pure" plant is being enjoyed without any processing that may reduce the antioxidant level.

Caffeine

The Camellia Sinesis plant naturally contains caffeine. The amount of caffeine is generally between 15mg per 8oz cup.

Steeping

White Tea should be prepared using non-boiling water (around 190 degrees Fahrenheit/ 87 Celcius) and 1.5 teaspoons per 8oz cup.
